
is it standard to open a bottle of White Wine while it’s in the ice bucket in the restaurant.?
I’m working in a formal dining resto and want to make sure I’m doing the right thing.
No, you take it out of the ice, wipe it with a tea towel you have draped over your arm, then open it carefully, pour a small amount into the glass of the person ordering the wine for a taste…when he/she nods approval, continue serving the others, beginning with the women and never fill the glass all the way. Place bottle, still wrapped, back in the ice bucket.
