Well, you can’t stereotype “US VEGANS”, first of all, by asking what “WE” think of this or that.
How do I, as a vegan view yeast? I don’t really think about it. But I certainly am not bothered by eating bread that contains it. We have living organisms all around us, on our bodies, in our mouths and in the air. Being a vegan is about avoiding animal suffering by eating a plant based diet and avoiding certain clothing, products etc. It has nothing to do with micro-organisms like yeast. And according to Wikipedia, yeast is “classified in the kingdom Fungi”, hence the answer about Fungi. Look it up.
